① The roasting degree of coffee beans is too shallow.
Generally, the coffee beans sold on the market are divided into coffee beans for hand washing and drip filtration and coffee beans for espresso machines. The former is mainly single beans, and the baking will be shallow. The latter is mainly mixed (formula) beans, and there is also SOE of single beans, which is generally deep in baking.
Conclusion: The deeper the baking degree, the richer the performance of coffee oil. However, the single bean used for hand washing will be thin for espresso.
② The pressure of the coffee machine itself is not good.
This problem is common in domestic coffee machines. Usually, we can extract the thick oil because the pressure of the coffee machine is 9bar to press out the essence of the coffee powder. However, some small espresso machines do not have a stable extraction pressure of 9 bar, so they cannot press out thick fat.
③ The coffee is coarsely ground.
In this case, the oil will not be rich. This situation is very easy to confirm. The extraction process state is that the flow rate of coffee liquid is very fast, accompanied by the perforation jet caused by the channel, and the coffee oil will appear light and thin. The taste of espresso will also be weak. You can use 20 seconds as a criterion. If you can extract twice the amount of coffee powder within 20 seconds, it is very likely that the coffee powder has been ground coarsely.
④ The water temperature is too low.
Now many new coffee machines have the function of manually adjusting the water temperature. Generally, the water temperature for extracting Italian concentrate is about 93 ℃. There may be no grease at too low temperature.
